Traditional Chinese Tea Trays

Tea trays and small Yixing teapots are traditionally used in Gunfu. Gunfu is a way of brewing, serving and enjoying tea which involves a tea tray, a teapot and small tasting cups. It is the opposite of the 'large mug with a teabag' culture we have been exposed to for so long. In Gunfu, the tea leaves are being re-infused multiple times, giving a different taste with every infusion. We taste each infusion and become aware of the subtle changes in flavour with each subsequent infusion. The teapots are filled with tea leaves and the first short infusion is used to "wash" the tea and pre-warm the cups. The second infusion becomes the first "drinkable" infusion. This process is repeated until the tea has given out all its flavour. It is a ceremony, where the emphasis is on enjoyment.
