BLENDED TEAS (India)
High-grade Darjeeling black tea is mixed with brisk green peppermint to produce an unusually fragrant summery tisane.
Larsen & Thompson’s Lebanese Ice Tea
600 ml boiling water
8 tsp Pep®mint cha tea
10 tsp Sugar (40 to 50 grams)
6 tsp Pomegranate Molasses
Fresh sprigs of Mint and / or Lemon Verbena
Raw pine nuts
Brew the Pep®mint cha tea in 600 ml of boiling water for 10 minutes. This can be done in a teapot or in a saucepan. Make it strong as this is your concentrate.
Add sugar and pomegranate molasses, stir to combine flavours.
Strain through a fine mesh strainer.
Fill glasses with ice cubes and fresh mint leaves and / or lemon Verbena. Pour the freshly brewed tea into the glasses. The ice cubes will melt fast, cooling the hot tea. Sprinkle a tsp of raw pine nuts on top of each glass and serve immediately.
